Wagyu and Kobe Beef in Japan: A Trade Guide

For a large share of food-led clients, one meal justifies the airfare: real wagyu, eaten in Japan, at a counter where the chef cooks it in front of them. The problem is that "wagyu" and "Kobe" have been marketed into mush abroad, and the genuine article — graded, certified, and tied to named regions — needs explaining to be sold well. Here is the working knowledge the trade needs, and how we book it.

What the names actually mean

Wagyu simply means Japanese cattle, graded for yield (A–C) and marbling (1–5) — the "A5" clients have heard of is the top of both scales. The famous names are regional brands with strict certification:

  • Kobe beef — Tajima-strain cattle from Hyogo prefecture meeting some of the strictest criteria in the country; certified restaurants display a bronze statue and certificate.
  • Matsusaka beef — from Mie prefecture, prized for fat quality; many Japanese gourmets rank it above Kobe.
  • Omi beef — Shiga's brand and arguably Japan's oldest, with four centuries of history.
  • Hida beef — the Takayama region's pride, best eaten in the old town itself — see the Takayama guide.

How to eat it

Different formats suit different clients. Teppanyaki is the theatre option — chef, griddle and counter seats, the classic way to take Kobe in Kobe. Sukiyaki and shabu-shabu suit groups and celebrate the marbling in broth. Yakiniku is the relaxed grill-it-yourself evening that families and younger clients love. And the wagyu sando or beef kaiseki covers the high-low extremes — a full spectrum we build into food programs alongside sushi counters and market mornings.

Where — and the booking reality

Kobe itself is an easy add to any Kansai itinerary (30 minutes from Osaka), and pairing the city's certified counters with a harbour stroll makes a satisfying half-day. Matsusaka works from Ise-Shima; Hida beef anchors Takayama; Tokyo and Osaka hold outposts of nearly every brand for clients who cannot detour. The catch is access: the best counters hold a handful of seats, take no overseas bookings, and fill weeks out. Securing them — with dietary notes handled and the certificate explained — is exactly the kind of reservation work a Japan DMC does daily, the same machinery behind our unique dining experiences.

FAQ

What is the difference between wagyu and Kobe beef? Wagyu means Japanese cattle generally, graded A1–A5. Kobe is one certified regional brand — Tajima-strain wagyu from Hyogo prefecture meeting strict criteria. All Kobe is wagyu; very little wagyu qualifies as Kobe.

Is A5 wagyu always the best choice? A5 is the highest marbling grade, but it is intensely rich — a 100–150g portion is plenty for most diners. Some connoisseurs prefer A4 for balance; a good counter will guide the choice.

Do Kobe beef restaurants take reservations from abroad? The certified counters rarely do — seats are few and often phone-only in Japanese. A ground operator books them as part of the itinerary, which is the reliable route to a confirmed seat.
